Maintenance and care
Ill start with carbon steel. Carbon unfortunately has gotten a bad wrap over the years for rusting and discoloring. The truth of the matter is yes all carbon steel can rust under the right conditions, but its very easy to avoid. In my experience what causes carbon steel to rust is a combination of heat and moisture on bare steel. For example a new carbon steel knife would rust if you washed it and left it wet. However carbon steel does not “try” to rust. In fact once the carbon has a patina it actually prevents rust to an extent. The care I recommend for all carbon steel knives is to wash the knife and dry with a paper towel, especially when the knife is new. If you want to can oil the knife, I prefer olive oil mainly because its already in the kitchen and food safe. Also knife blocks where the knife is completely enclosed in wood can cause rust, since the small slot for the knife can trap moisture. as far as the wood goes, all the wood I use is either stabilized or naturally oiling, meaning they are 100% water proof and technically don’t need any care. If you want to baby the handles or add some extra shine you can apply some olive oil to them in a small amount with a paper towel. Stainless of course as the name implies, is stainless. Its very hard to make a stainless rust, id still recommend drying them after washing.

All the steel I get is produced in Germany. The 26c3 I use is produced by Uddeholm and the NitroV is produced by Bohler. The wood I use is all stabilized or naturally self oiling wood from around the world, and all animal material is sourced ethically. Each knife is check with a hardness tester.
