This chefs knife has a beautiful hamon with a mirror finish. A hamon is a type of heat treatment that originally comes from Japan. Hamons are created by coating the spine of the knife with clay allowing only the spine of the knife to remain soft during heat treatment. The result is a beautiful pattern that represents the hard cutting edge and the soft spine. This knife has a 8” blade and a 4.75” handle. Blade height is 2” which allows for great hand clearance. Spine thickness is .1” with a slight distal taper. Edge is .005” behind the edge. This knife will not only be a statement piece but also a work horse for any kitchen.
